Never before has our Cabernet Sauvignon been exposed to the virtues of a new Vicard medium-toast barrel. In the past the cooperage has been equally Taransaud, Gamba and St. Martin, but for Premiere Napa Valley, we chose to pair these two. Starting with fruit grown in Coombsville's only CCOF vineyard, the wine was made in Howell Mountain's only CCOF winery, so naturally, this lot stands out for its organic provenance. But the depth of texture gained from this new Vicard barrel accents not only the lovely fruit, but the naturally low alcohol and pH from the 2011 vintage in Coombsville to create a balanced and elegant, yet complex, wine.
2 years in new Vicard Cooperage with Medium Toast. 2 years in bottle. Racked 4 times.
