Description
Hill Wine Company specializes in using 100% organically farmed vineyards. All vineyards are controlled by us and pick based on the grapes’ flavors. For Premiere, we have chosen to offer a hillside select blend of Howell Mountain Cabernet Sauvignon from our newest property. We hand sorted the clusters, then berries, until we had the best of the best. These underwent extended fermentation, using the whole berries, and basket pressed for gentler pressing and more free flow. We then aged the wine in 100% French oak. Through this minimal intervention, we were able to allow the grapes to speak for themselves through the wine, reflecting the special place they came from.
Aging Process
19 months on 100% French Oak. Oak is 50% new and 50% once used.
