Upon the completion of the 2007 harvest, we designated a special lot specifically for this year's Premiere Napa Valley. We selected a one-ton lot of Cabernet Sauvignon from our I block. At 18 years of age, it is the oldest block on the PlumpJack Oakville Estate. This fruit was fermented in two brand-new 130-gallon Sylvain oak barrels. After fermentation, the free run was combined and then put into a Taransaud V. These rare barrels are made from oak harvested from the center of France and subsequently aged for five years as opposed to two.
