Description
Forget what you've heard. Cabernet is not "king." Not when you are a gnarled, old-vine Merlot growing in Napa Valley’s famed Oakville District. We're talking rocky soils, hand-pruned low-yield vines that are hand picked, hand sorted, matured in the best new French oak barrels and traditionally fined "a la Bordelaise" with organic egg whites. Textbook's “OMG It’s Good (just don't tell anyone it's Merlot)" shows how good "small lot" winemaking can be. This is crafted for the savvy oenophile who loves decadent dinner tables adorned with tenderloins (not tofu) and sirloins (not sushi). The "king" is dead—long live Textbook.
Aging Process
Matured in 60% new French oak barrels for twenty months. Racked three times, egg white fined, unfiltered.
