Honig Vineyard and Winery

Late Harvest Sauvignon Blanc
Rutherford

5 cases produced

Description

Aromas and flavors of honey, dried apricot and citrus rind are layered with creme brûlée and mineral, in this truly exceptional Late Harvest Sauvignon Blanc. The fruit for this wine comes from Block One of our vineyard, next to the Napa River. The close proximity to the river's moisture aids in the natural occurrence of Botrytis, critical to a late harvest wine. Rich and luscious, with balanced acidity, it pairs perfectly with fois gras, blue cheese and stone fruits, and is delicious on its own.

Aging Process

Barrel fermented, then aged on the lees in new French oak barrels for 6 months

Q&A With the Winemaker

Q: Premiere Napa Valley wines are innovative and allow each winery to showcase the region's sense of exploration in fine winemaking. What kind of exploration did your Premiere Napa Valley wine allow you to do?

A: Making a late harvest (botrytisised) dessert wine is always a great adventure! Each year the conditions vary tremendously and there always seems to be a new twist. What makes it so worthwhile, after all of the fussing and worrying, is the nearly magical transformation of what looks to be a horrible disaster (moldy grapes) into the delecious nectar that is Late Harvest Sauvignon Blanc

Q: What was your inspiration for this offering?

A: Napa valley has so many top notch Cabernet Sauvignons, yet there are so many hidden gems in lesser know varietals. WE decided to mix it up a bit and offer something completely different

Q: Fill in the blanks: I chose to make this wine from this particular ______________ because ______________.

A: I chose to make this wine from this particular  block/vineyard  because  It is a block in out vineyard that lends itself to producing fine LAte HArvest wines.

Q: Why should a wine lover have a bottle of this wine in their cellar?

A: Is there a more perfect way to end a meal than sipping on a delicious dessert wine? Try it solo or with a perfectly matched exotic dessert or a rare cheese.
