Description
It was cold here atop Spring Mountain during the '98 Cabernet fermentation season. A blend of Spring Mountain and Valley floor fruit slowly finished malolactic fermentation and was pressed off on Christmas Eve 1998. Only three barrels of this Christmas Cabernet were pressed. They are aging in new French oak and showing a dark body, a deep perfume, a soft, rich flavor and an everlasting finish. This five-case lot is an exclusive part of only 60 cases of Domaine Charbay Christmas Cabernet.
