Sylvie Estate

Cabernet Sauvignon
Oakville

5 cases produced

Highlights

  • Produced from our 34-year-old vines planted in the iron-rich soils of eastern Oakville
  • With just 30 rows of vines, Sylvie Estates never produces more than 100 cases of wine per year
  • This incarnation was selected from our very favorite barrel, a new French Berger & Fils
  • Ripened to perfection in the warm Oakville sun, this wine is opulent, classic and powerful

Description

For the first time in its 15-year history, Sylvie Estate is offering up a unique 60-bottle lot from its 30 rows of organically-farmed vines, located in the red volcanic soils of the foothills of the Vaca Mountains in eastern Oakville. Never producing more than 100 cases annually, Sylvie’s wines are always hard to find, but this offering is especially rare. Hand-harvested, fermented in its own micro-tank, meticulously racked and blended, and aging for 21 months in a new Berger & Fils French oak barrel, this 100% Cabernet Sauvignon is opulence personified.

Winemaking Philosophy:
My philosopy towards winemaking involves letting the site drive the process. I've had the good fortune to work with some phenomenal sites over the course of my career, and I enjoy the process of tailoring my approach to winemaking to each site in order to realize its potential. I feel that it's possible to produce balanced wines even from full-throttle sites; I love intense flavors, and I enjoy the process of adding layers and complexity through a preservation of varietal character and a conscientious approach to the development of midpalate.
