Description
Planted among our six acres of Merlot are 380 Cabernet Sauvignon vines. Originally harvested with the Merlot as a field blend, they yield a beautiful wine on their own, so we now allow a small quantity of grapes to ripen to optimum maturity for a Cabernet bottling.
For Premiere, we chose to feature Cabernet from an interplanted area of the vineyard. The fruit was hand punched down in half-ton bins and pressed out using a small basket press, with the first 60 gallons of free flow juice reserved for the Premiere program. The wine was then aged in a French oak barrel and finished with a touch of our estate Merlot and Cabernet Franc.
