2016 Cabernet Sauvignon
Spring Mountain District
This wine shows the classic tannic backbone of a mountain-fruit based Napa Valley Cabernet Sauvignon, which requires patience and some extended time in the cellars. The mid-palate is filled with clean, black fruits blanketed with layers of spice and cedar notes. Plenty of acidity in this wine lingers on the finish. You will be rewarded by letting this wine rest for 3 to 5 years in the cellars. The fruit used in making this wine is from our vineyard perched on an exposed shoulder up on Spring Mountain. The vineyard is at an optimum elevation of about 1,000 ft., which offers plenty of sun for the vines, as it sits above the fog, basking in the warmth of the valley.
Winemaker, Bougetz Cellars
After working a couple of harvest in the Pacific Northwest, I settled in the Napa Valley and have focused the past eight years on creating beautiful Cabernet Sauvignons and Bordeaux blends.
With the assistance of Kian Tavakoli, our consulting winemaker, we spend lots of time in the vineyards, selecting particular blocks to use for our wines.
Country born: United States
Education: Studied Enology at The Northwest Wine Academy in Seattle, WA.
Years in the wine industry: 10-15 years
Winemaking Philosophy:
We start in the vineyard by selecting blocks from very well managed vineyards, choosing to begin with the best fruit possible. In the cellar, we focus on method that assist in extracting the most from the fruit, while still handling it as gentle as possible. Minimal movement of the wine during aging with as little interruptions as possible. All wines are blended, as we have multiple rounds of barrel selection, and blending to put together the blends that best display the vintage and vineyard sites.
