2018 Cabernet Sauvignon
Napa Valley
Cracking the heads off wine barrels, crushing fruit into them and then putting the heads back on in order to have a miniature, submerged cap fermentation is messy, sticky and often results in bruises and splinters ... but the results are worth the effort in time and cost. This wine is the result of years of playing around with our fermentation techniques. We find that a touch of our Calistoga sourced Petite Sirah co-ferments beautifully with our Oak Knoll District of Napa Valley Cabernet Sauvignon vineyard. The two are knitted together during the fermentation into something quite unique and delicious.

Winemaking Philosophy:
The vineyard lays the foundation for a great wine. Site selection and vineyard development are the cornerstones. Thoughtful farming with an aim for vine balance, fruit quality as well as land stewardship are the structure. I'm fortunate to work with a small group of great farmers who strive to achieve top quality wines from diverse sites. My techniques in the winery may be seen as a little old fashioned to some. I strive for elegance during extraction and aging and use blending to find a wines complexity.
